Super Green Soup

A creamy blended veggie soup finished with roasted pumpkin seed oil for a rich, nutty depth — no roasting required.

Ingredients

  • 1/4–1/2 cup of pumpkin seed oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, chopped
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 4 cups vegetable or chicken broth
  • Salt & pepper to taste
  • Optional: 1/2 cup cream or splash of milk

Directions

  1. Combine all ingredients into a large pot.
  2. Bring to a boil.
  3. Reduce heat and cook for 15–20 min or until vegetables are soft and tender.
  4. Add cream (if desired) and pumpkin seed oil.
  5. Blend until smooth.

For finishing touches, drizzle oil over the top of soups.
