Super Green Soup
A creamy blended veggie soup finished with roasted pumpkin seed oil for a rich, nutty depth — no roasting required.

Ingredients
- 1/4–1/2 cup of pumpkin seed oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 medium zucchini, chopped
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 4 cups vegetable or chicken broth
- Salt & pepper to taste
- Optional: 1/2 cup cream or splash of milk
Directions
- Combine all ingredients into a large pot.
- Bring to a boil.
- Reduce heat and cook for 15–20 min or until vegetables are soft and tender.
- Add cream (if desired) and pumpkin seed oil.
- Blend until smooth.
For finishing touches, drizzle oil over the top of soups.
