Roasted Pumpkin Seed Oil Vinaigrette

A honey-mustard vinaigrette made with roasted pumpkin seed oil and white wine vinegar. Whisk, pour, and elevate any salad.

Ingredients

  • 1½ tsp Dijon mustard
  • 1 tbsp clear honey
  • 1 tsp lemon juice
  • 60 ml white wine vinegar
  • 1 tsp salt
  • ½ tsp black pepper
  • 140 ml roasted pumpkin seed oil

Directions

  1. Combine mustard, honey, lemon juice, white wine vinegar, salt and pepper in a mixing bowl.
  2. Slowly whisk in the roasted pumpkin seed oil until emulsified.
  3. Serve immediately or store in a jar and refrigerate for later use.
