Roasted Pumpkin Seed Oil Vinaigrette
A honey-mustard vinaigrette made with roasted pumpkin seed oil and white wine vinegar. Whisk, pour, and elevate any salad.

Ingredients
- 1½ tsp Dijon mustard
- 1 tbsp clear honey
- 1 tsp lemon juice
- 60 ml white wine vinegar
- 1 tsp salt
- ½ tsp black pepper
- 140 ml roasted pumpkin seed oil
Directions
- Combine mustard, honey, lemon juice, white wine vinegar, salt and pepper in a mixing bowl.
- Slowly whisk in the roasted pumpkin seed oil until emulsified.
- Serve immediately or store in a jar and refrigerate for later use.
