Roasted Autumn Veggies
Sheet-pan root vegetables finished with brown sugar and a drizzle of roasted pumpkin seed oil. Earthy, sweet, and nutty in every bite.

Ingredients
- Butternut squash
- Sweet potatoes
- Carrots
- Beets
- Maple syrup or brown sugar
- Salt & pepper
- Olive oil
- Pumpkin seed oil
Directions
- Lightly oil and season chopped root vegetables with salt and pepper.
- Spread on parchment-lined baking sheet.
- Cook at 375°F for 30 min.
- Remove from oven, sprinkle with brown sugar and drizzle with pumpkin seed oil.
- Finish cooking for 10–15 min or until tender.
Why it works
The earthy flavour of the root vegetables perfectly pairs with the sweet brown sugar and nuttiness of the pumpkin seed oil.
